Berry Breakfast Bars are one of my favorite easy, home-made breakfast recipes. My usual go-to is quinoa mason jars, or something easy like overnight oats. But sometimes I get a little bit fancy and make a homemade bar.
You may be thinking that these are probably super time-consuming and hard to make. They are SUPER easy! They are a tad crumbly but so delicious! I love that they can be served warm or cold.
Add in a little yogurt for an even heartier breakfast!
I love that this bar recipe is completely versatile. You could eat them straight up as a bar (although I warn, they are crumbly!), or you could create a healthy breakfast parfait! Try them warm with a little bit of greek yogurt on top. To keep the recipe dairy free, opt for coconut or non-dairy yogurt. Two of my favorite non-dairy yogurts are Silk almond yogurt and So Delicious coconut yogurt.
Doubles as a dessert!
The amazing thing about these bars is that they could EASILY double as a healthy dessert. Perfect for summer picnics, you could scoop this warm out of the oven and top with some vanilla frozen yogurt, or even some Halo Top! Cool vanilla bean over warm and gooey berries sounds pretty amazing to me!
Hallelujah these are also kid-friendly!!! As long as your kids are berry lovers (unfortunately mine are not) and don’t have nut allergies, these berry breakfast bars are perfect for them as well!
