Easy, Healthy, and Not as Hard as You Might Think!

Berry Breakfast Bars are one of my favorite easy, home-made breakfast recipes.   My usual go-to is quinoa mason jars, or something easy like overnight oats.   But sometimes I get a little bit fancy and make a homemade bar.

Add in a little yogurt for an even heartier breakfast!

Doubles as a dessert!

Kid-Friendly!

Hallelujah these are also kid-friendly!!!  As long as your kids are berry lovers (unfortunately mine are not) and don’t have nut allergies, these berry breakfast bars are perfect for them as well!

OK friends so you know I’m a breakfast lover, and its obvious that I’m a fan of sweets.  What are your favorite things to eat for breakfast?  Do you tend to eat savory or sweet in the morning?

Instructions
  1. Pre-heat oven to 350 degrees and grease an 8X8 pan with coconut oil. Line with parchment paper.
  2. Mix together berries, lemon juice, and vanilla extract. Set aside
  3. In a food processor, pulse oats, almond butter, coconut oil, coconut sugar, baking soda, vanilla extract, and salt until mealy (not a fine flour). Measure out 2/3 of the oat mixture and press into the bottom of the 8X8 pan.
  4. Drain berries of excess liquid and toss with cornstarch. Gently press berries into the oat bar and top with remaining oat mixture.
  5. Bake 40-45 minutes until golden brown. Allow to cool and cut into bars

  5. breakfast bars that double as dessert bars? Yes please! these look so yummy and easy to make, which as a mom with two littles, that’s important to me.
