Pumpkin Puree Recipe (Baked Oats)

This easy and healthy blended baked oatmeal is filling and nutritious. Quick to bake in less than 30 minutes!

Ingredients

oatmeal pumpkin protein drink or almond milk pumpkin puree Greek yogurt maple syrup baking powder chocolate chips or pecans

What Makes This Recipe Work

Easy to make in a single serving for one or bake as it to create 4 servings. This works to feed your entire family a healthy breakfast or for 4 days worth of meal prep!

Add all ingredients, except for chocolate chips, to a high-speed blender like a Vitamix. Process until smooth and there are very few lumps (it should look more grainy, not lumpy.)

Pour oatmeal mixture into a prepared baking dish (sprayed with coconut oil spray) and stir in mix-ins. Bake at 350F for 30 minutes.
